Portobello Mushroom topped with mashed potatoes & spinach

Preparation Steps:

  1. Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it’s ready for baking the portobello mushrooms.
  2. Prepare the Portobello Mushroom: Start by removing the stem from the portobello mushroom and gently cleaning any dirt from its surface. This ensures a clean base for the marinade and toppings.
  3. Whisk the Marinade: In a small bowl, whisk together the olive oil, balsamic vinegar, lemon juice, tamari or soy sauce, and minced garlic. This flavorful marinade will infuse the portobello with delicious savory and tangy notes.
  4. Marinate the Portobello: Place the cleaned portobello mushroom in a shallow dish or pan, and pour the marinade over it, ensuring that the mushroom is evenly coated. Allow it to marinate for at least 15-20 minutes to absorb the flavors.
  5. Bake the Portobello: Transfer the marinated portobello mushroom to a baking pan or dish, and bake in the preheated oven for approximately 20 minutes. Baking allows the mushroom to soften and develop a rich, caramelized flavor.
  6. Prepare the Spinach: While the mushroom is baking, sauté the spinach in a skillet with a touch of olive oil and minced garlic until wilted. Season with salt and pepper to taste, adding a flavorful and nutritious topping to the dish.
  7. Prepare the Mashed Potatoes: Meanwhile, prepare your mashed potatoes by boiling or steaming them until tender. Mash them with a fork or potato masher, adding a splash of milk or butter for creaminess, if desired.
  8. Assemble and Serve: Once the portobello mushroom is baked to perfection, remove it from the oven. Pour any remaining marinade over the mushroom, then fill the cavity with the sautéed spinach and top with a generous dollop of mashed potatoes. Sprinkle with additional scallions or herbs for garnish, if desired.
  9. Enjoy: Serve the Portobello Mushroom topped with mashed potatoes & spinach hot, allowing the savory flavors to meld together for a delicious and satisfying meal.
