Keto Nacho Platter
Ingredients:
- 1 bag of keto-friendly tortilla chips (or homemade keto chips)
- 1 pound of ground beef or ground turkey
- 1 packet of keto-friendly taco seasoning mix
- 1 can of refried black soybeans (a low-carb alternative to traditional refried beans)
- 1 jar of low-carb salsa
- 1 cup of shredded cheddar cheese
- 1 cup of shredded lettuce
- 1 tomato, diced
- 1/2 cup of sliced jalapenos (optional)
- Keto-friendly sour cream (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef or turkey until browned. Add the keto-friendly taco seasoning mix and prepare according to the package instructions.
- Lay out the keto-friendly tortilla chips on a large baking sheet or platter.
- Heat the can of refried black soybeans in a small saucepan over low heat.
- Spoon the refried black soybeans over the tortilla chips, spreading them evenly.
- Add the seasoned meat over the beans.
- Pour the low-carb salsa over the meat.
- Sprinkle the shredded cheddar cheese on top.
- Bake in the preheated oven for 10-15 minutes or until the cheese is melted and bubbly.
- Remove from the oven and top with shredded lettuce, diced tomato, and sliced jalapenos (if desired).
- Serve with keto-friendly sour cream on the side.
