Preheat oven to 350
Line baking sheet with parchment paper
Place either cheese slices or piles of shredded cheese spread out to leave room for melting
Place in oven and bake 5 minutes
I used leftover pork loin that I shredded but you could use shredded chicken or beef!
In a bowl, heat up the meat to the desired temperature
Add cream cheese (the amount will depend on how much meat you have so I’m not much help here. I added about 6 oz for about 2 cups shredded pork)
I then added a large can of diced green chiles
I put this back in the microwave for about another minute to make sure my filling was warm
When the five minutes are up take the cheese out of the oven and let sit for about 1.5-2 minutes.
Place small amounts of filling mixture in center of each melted cheese square
Using a spatula, lift one side of the cheese and stretch over the middle of the filling, repeat with other side (both edges should meet in the middle)
I then pressed the seem together
Note: If you wait too long, the cheese will harden and you can’t roll it
