No-Bake Keto Peanut Butter Bars

Ingredients:

For the base:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated erythritol or other keto-friendly sweetener
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 cup melted coconut oil

For the peanut butter filling:

  • 1 cup natural creamy peanut butter
  • 1/4 cup melted coconut oil
  • 1/4 cup granulated erythritol or other keto-friendly sweetener
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. Line an 8-inch square baking dish with parchment paper.
  2. In a large mixing bowl, whisk together the almond flour, coconut flour, sweetener, cocoa powder, and salt.
  3. Add the melted coconut oil and mix until the mixture is crumbly.
  4. Press the mixture into the bottom of the prepared baking dish in an even layer. Place in the refrigerator to chill while you prepare the peanut butter filling.
  5. In a separate mixing bowl, mix together the peanut butter, melted coconut oil, sweetener, vanilla extract, and salt until smooth and well combined.
  6. Spread the peanut butter filling on top of the chilled chocolate base, making sure it’s evenly distributed.
  7. Place the dish back in the refrigerator and let it chill for at least 2 hours or until firm.
  8. Once firm, lift the bars out of the dish using the parchment paper and cut into desired size bars.
  9. Store the bars in an airtight container in the refrigerator for up to 2 weeks, or in the freezer for up to 3 months.
