Low Carb Beef Nachos

Ingredients:

For the “Nachos”:

  • 1 pound ground beef (or ground turkey or chicken)
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning (make sure it’s low-carb)
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (or a mix of your favorite cheeses)
  • Sliced jalapeños (fresh or pickled), for topping

For the “Chips”:

  • 1 large head of cauliflower
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Optional Toppings:

  • Sliced black olives
  • Chopped tomatoes
  • Sliced green onions
  • Sour cream
  • Guacamole
