Keto Nacho Platter

Ingredients:

  • 1 bag of keto-friendly tortilla chips (or homemade keto chips)
  • 1 pound of ground beef or ground turkey
  • 1 packet of keto-friendly taco seasoning mix
  • 1 can of refried black soybeans (a low-carb alternative to traditional refried beans)
  • 1 jar of low-carb salsa
  • 1 cup of shredded cheddar cheese
  • 1 cup of shredded lettuce
  • 1 tomato, diced
  • 1/2 cup of sliced jalapenos (optional)
  • Keto-friendly sour cream (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef or turkey until browned. Add the keto-friendly taco seasoning mix and prepare according to the package instructions.
  3. Lay out the keto-friendly tortilla chips on a large baking sheet or platter.
  4. Heat the can of refried black soybeans in a small saucepan over low heat.
  5. Spoon the refried black soybeans over the tortilla chips, spreading them evenly.
  6. Add the seasoned meat over the beans.
  7. Pour the low-carb salsa over the meat.
  8. Sprinkle the shredded cheddar cheese on top.
  9. Bake in the preheated oven for 10-15 minutes or until the cheese is melted and bubbly.
  10. Remove from the oven and top with shredded lettuce, diced tomato, and sliced jalapenos (if desired).
  11. Serve with keto-friendly sour cream on the side.
