Vegan Stir Fry

Ingredients

For the Stir Fry

  • 6 ounces soy curls (half a bag)
  • 4.5 cups water
  • 3.75 tablespoons Butler Chik-Style Seasoning, optional
  • 3 tablespoons olive oil, divided
  • 1.5 small onion, diced
  • 1.5 medium zucchini, sliced and halved or quartered
  • 3 cups broccoli florets
  • 1.5 medium carrot, peeled and chopped
  • 12 ounces mushrooms, sliced
  • 1.5 red bell pepper, seeded and chopped into large chunks
  • 6 cloves garlic, minced
  • 3 teaspoons fresh minced ginger
  • 0.75 cup cashews or peanuts, optional
  • chopped green onions
  • sesame seeds

For the Stir Fry Sauce

  • 0.75 cup vegan no chicken broth or vegetable broth
  • 0.38 cup low sodium soy sauce
  • 0.38 cup water
  • 0.38 cup agave
  • 1.5 tablespoon toasted sesame oil
  • 0.75 teaspoon crushed red pepper flakes
  • 1.5 tablespoon cornstarch
