Ingredients:

  • 2 cups cooked and chilled long-grain rice (preferably day-old)
  • 1 cup pineapple chunks, fresh or canned
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce or tamari (adjust to taste)
  • 1 tablespoon curry powder (adjust to taste)
  • 1/4 cup chopped cashews or peanuts (optional, for topping)
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving
