Vegan Lemon Truffles

Ingredients:

For the truffles:

  • 1 cup raw cashews (soaked in water for at least 2 hours, then drained)
  • Zest of 2 lemons
  • Juice of 2 lemons
  • 1/4 cup coconut flour
  • 1/4 cup maple syrup or agave nectar
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

For the coating:

  • 1/2 cup vegan white chocolate chips or vegan white chocolate bar (melted)
  • Zest of 1 lemon (for garnish)

Instructions:

  1. In a food processor, combine the soaked cashews, lemon zest, lemon juice, coconut flour, maple syrup or agave nectar, vanilla extract, and a pinch of salt. Blend until you get a smooth and thick dough-like consistency.
  2. Scoop out small portions of the mixture and roll them into small balls, about 1 inch in diameter. Place the balls on a baking sheet lined with parchment paper.
  3. Place the baking sheet in the freezer for about 15-20 minutes to firm up the truffle balls.
  4. While the truffle balls are chilling, melt the vegan white chocolate. You can do this by placing the chocolate chips or chopped chocolate bar in a microwave-safe bowl and microwaving in 20-second intervals, stirring between each interval until fully melted. Alternatively, you can melt the chocolate using a double boiler on the stovetop.
  5. Once the truffle balls are firm, use a fork or dipping tool to coat each truffle ball in the melted white chocolate. Allow the excess chocolate to drip off, then place the coated truffles back on the parchment paper-lined baking sheet.
  6. While the chocolate coating is still wet, sprinkle a small amount of lemon zest on top of each truffle for garnish.
  7. Place the coated truffles back in the freezer for another 10-15 minutes to set the chocolate.
  8. Once the chocolate is fully set, transfer the truffles to an airtight container and store them in the refrigerator until ready to serve.

Feel free to adjust the sweetness and lemon flavor to your preference. You can also get creative with the coating by using different types of vegan chocolate or rolling the truffles in shredded coconut, chopped nuts, or cocoa powder instead.
