Vegan Black Bean Burrito

Ingredients:

  • 4 large tortillas (whole wheat or gluten-free, if preferred)
  • 2 cups cooked black beans
  • 1 cup cooked brown rice
  • 1 cup diced tomatoes
  • 1 cup corn kernels
  • 1/2 cup diced red onion
  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional toppings: avocado slices, salsa, vegan sour cream, shredded lettuce, hot sauce
