Instructions
1. Wipe the mushrooms thoroughly with a clean cloth. Then cut off the stems and set aside. Clean it thoroughly.
2. After laying it on a baking tray lined with greaseproof paper, drizzle olive oil on it.
3. Dice the onion and grate the garlic.
4. Then finely chop the mushroom stems and parsley.
5. Chop the eggplant, tomatoes and peppers into cubes.
6. Take the rest of the olive oil in the pan and heat it. Fry the garlic and onions.
7. After the onions change color, add other vegetables and continue frying.
8. When it starts to absorb water, add parsley, lemon juice, salt and pepper, mix a little and turn off the stove.
9. Divide the stuffing you have prepared on the mushrooms in the tray. You can grate vegan cheese on them.
10. It is enough to cook for 10 minutes in the oven that you have preheated at 250 degrees.
