LOW CARB BROCCOLI SALAD WITH BACON

Ingredients:

For the Salad:

  • 4 cups fresh broccoli florets (about 2 small heads)
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cooked and crumbled bacon (about 6-8 slices)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sunflower seeds (optional)
  • Salt and black pepper to taste

For the Dressing:

  • 1/2 cup mayonnaise (you can use a low-fat or avocado mayo for a healthier option)
  • 2 tablespoons apple cider vinegar
  • 1-2 tablespoons low-carb sweetener (like erythritol or stevia) or to taste
  • 1 clove garlic, minced
  • 1/2 teaspoon Dijon mustard
  • Salt and black pepper to taste
