Keto Walking Taco Casserole

Here’s how to make Keto Walking Taco Casserole:


Taco Seasoning:

  • ½ teaspoon onion powder
  • 1 ½ teaspoon Kosher salt
  • 1 ½ teaspoon Cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika

Taco Casserole:

  • 1 pound ground beef
  • 1 can original Rotel (tomatoes with green chilis), undrained
  • 2 cups shredded cheddar cheese


  • 3 ounces Keto Nacho Cheese Chips (e.g., Hilo)
  • 1 cup shredded lettuce
  • 8 cherry tomatoes, halved
  • 2 sliced green onions
  • 2 tablespoons chopped cilantro
  • ¼ cup sour cream (optional)


  1. Preheat the oven to 375°F (190°C).
  2. In a small mixing bowl, combine all the ingredients for the taco seasoning. Mix until well combined and set aside.
  3. Heat a heavy-bottom skillet over medium heat. Add the ground beef and cook until browned and crumbled. Drain any excess grease.
  4. Add the homemade taco seasoning and Rotel to the skillet with the ground beef. Stir well to combine.
  5. Sprinkle the shredded cheddar cheese evenly over the top of the beef mixture.
  6. Transfer the skillet to the preheated oven and bake for 10 minutes, or until the cheese is melted and bubbly.
  7. Remove the casserole from the oven. Garnish with Keto Nacho Cheese Chips, shredded lettuce, halved cherry tomatoes, sliced green onions, and chopped cilantro.
  8. Serve with sour cream on the side, if desired.

  • Preheat the oven to 375F. In a small mixing bowl combine all the ingredients for the taco seasoning. Mix until combined and set aside.
  • Heat a heavy bottom skillet over medium heat add your ground beef. Cook until ground beef is browned and crumbled. Drain any excess grease.
  • Add your homemade taco seasoning and rotel, stir. Sprinkle the cheddar cheese over the top and bake in already preheated oven for 10 minutes or until cheese is melted.
  • Remove from oven. Garnish with nacho chips, lettuce, tomato and green onions. Serve with sour cream.
