Here's how to make Keto Walking Taco Casserole:
Ingredients:
Taco Seasoning:
- ½ teaspoon onion powder
- 1 ½ teaspoon Kosher salt
- 1 ½ teaspoon Cumin
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- ½ teaspoon smoked paprika
Taco Casserole:
- 1 pound ground beef
- 1 can original Rotel (tomatoes with green chilis), undrained
- 2 cups shredded cheddar cheese
Toppings:
- 3 ounces Keto Nacho Cheese Chips (e.g., Hilo)
- 1 cup shredded lettuce
- 8 cherry tomatoes, halved
- 2 sliced green onions
- 2 tablespoons chopped cilantro
- ¼ cup sour cream (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- In a small mixing bowl, combine all the ingredients for the taco seasoning. Mix until well combined and set aside.
- Heat a heavy-bottom skillet over medium heat. Add the ground beef and cook until browned and crumbled. Drain any excess grease.
- Add the homemade taco seasoning and Rotel to the skillet with the ground beef. Stir well to combine.
- Sprinkle the shredded cheddar cheese evenly over the top of the beef mixture.
- Transfer the skillet to the preheated oven and bake for 10 minutes, or until the cheese is melted and bubbly.
- Remove the casserole from the oven. Garnish with Keto Nacho Cheese Chips, shredded lettuce, halved cherry tomatoes, sliced green onions, and chopped cilantro.
- Serve with sour cream on the side, if desired.
