Keto Blueberry Lemon Bread

Instructions:

  1. Preheat the oven to 350°F. Grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the melted butter, eggs, almond milk, lemon zest, lemon juice, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until well combined.
  5. Fold in the blueberries.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 45-50 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then remove it from the pan and let it cool completely on a wire rack.
