Keto Apple Fritters


For the fritters:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated sugar substitute (e.g., erythritol, stevia, or monk fruit)
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 2 large eggs
  • 1/4 cup unsweetened almond milk (or any non-dairy milk)
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted coconut oil
  • 1 medium-sized apple, peeled and diced (use a variety with lower sugar content like Granny Smith)

For frying:

  • Coconut oil or avocado oil for frying (enough to fill a medium-sized saucepan with about 1-2 inches of oil)

For the glaze (optional):

  • 1/4 cup powdered sugar substitute (e.g., powdered erythritol or powdered stevia)
  • 1-2 tablespoons unsweetened almond milk
  • 1/2 teaspoon vanilla extract
