Hobo Soup

Instructions:

  1. Heat a large pot or Dutch oven over medium heat. Add a drizzle of olive oil and sauté the diced onion until it becomes translucent.
  2. Add the minced garlic to the pot and cook for another minute until fragrant.
  3. Add the diced carrots, potatoes, and celery to the pot. Stir and cook for a few minutes until the vegetables start to soften.
  4. Pour in the can of diced tomatoes, including the juice, and the drained and rinsed kidney beans. Stir to combine.
  5. Add the vegetable or chicken broth and the bay leaf to the pot. Bring the soup to a boil, then reduce the heat to low and simmer for about 20-30 minutes or until the vegetables are tender.
  6. If you’re adding any additional vegetables like corn, green beans, or peas, add them to the pot during the last 10 minutes of cooking to ensure they don’t overcook.
  7. Season the soup with salt and pepper to taste.
  8. Remove the bay leaf before serving.
