Ingredients:
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 2 celery stalks, diced
- 1 can of diced tomatoes (14 ounces/400 grams)
- 1 can of kidney beans, drained and rinsed (14 ounces/400 grams)
- 4 cups of vegetable or chicken broth
- 1 bay leaf
- Salt and pepper to taste
- Olive oil for sautéing
Optional additional ingredients:
- 1 cup of corn kernels
- 1 cup of green beans, chopped
- 1 cup of peas
- Any other vegetables you have on hand
