Gluten-Free Keto Hot Cross Buns

Ingredients:

For the buns:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup powdered erythritol (or any keto-friendly sweetener)
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • A pinch of salt
  • 3 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup unsweetened almond milk (or any non-dairy milk of your choice)
  • 1 teaspoon vanilla extract
  • 1/4 cup raisins or currants (optional)

For the cross and glaze:

  • 2 tablespoons coconut flour
  • 2 tablespoons water
  • 1 tablespoon powdered erythritol
  • A few drops of vanilla extract
