Cheesy Vegan Garlic Mushroom & Spinach Pizza Toasts

Ingredients:

  • 4 slices of toast/bread of choice (optional gluten-free)
  • 100 ml pesto sauce
  • 125 g vegan grated cheese
  • Salt
  • Pepper
  • Pizza spice (optional)
  • Olive oil, to drizzle
  • Fresh basil (optional), for garnish

Instructions:

  1. Preheat the oven to 180°C (356°F) with circulating heat.
  2. Briefly toast the bread slices in a toaster for about 1-2 minutes.
  3. While the bread is toasting, prepare your toppings.
  4. Place the toasted bread slices on a baking sheet lined with parchment paper.
  5. Spoon a generous amount of pesto sauce onto each toast and spread it evenly with the back of a spoon, covering the corners.
  6. Top the pesto-covered toasts with your desired toppings, such as garlic mushrooms, spinach, or any other vegetables you prefer. Sprinkle the grated vegan cheese over the toppings.
  7. Optionally, sprinkle some salt, pepper, and pizza spice over the pizzas to enhance the flavor.
  8. Drizzle a little olive oil over the pizzas for added richness and flavor.
  9. Bake the pizza toasts in the preheated oven for about 10 minutes, or until the vegan cheese has melted and the edges of the bread are golden brown.
  10. Once baked, remove the pizza toasts from the oven and garnish them with fresh basil or any other herbs you prefer.
  11. Serve the cheesy vegan garlic mushroom & spinach pizza toasts immediately and enjoy!

Meanwhile, prepare your toppings.

Place the toasted bread slices on a baking sheet lined with baking paper. Add a generous spoonful of pesto sauce and spread with the back of the spoon to the corners.

Top with your toppings and grated vegan cheese. Drizzle with a little bit of olive oil, if you like.

Bake your pizza toasts in a preheated oven for about 10 minutes until the cheese has melted.

Remove from the oven and serve them garnished with basil (or other fresh herbs), if you like. Enjoy!
