Whole Roasted Cabbage

Ingredients:

  • 1 cabbage
  • 1/4 cup olive oil
  • 1/4 tsp thyme leaves
  • 1 Tbsp maple syrup
  • 1 tsp coarse or fine salt
  • 1/2 tsp ground black pepper
  • 1 tsp dried parsley or oregano
  • 2 Tbsp chili sauce
  • 1 Tbsp balsamic vinegar (optional, added after opening the foil)

Method:

  1. Preheat the oven to 350°F (175°C). Prepare a piece of aluminum foil twice the size of the cabbage and place a piece of baking parchment paper on top.
  2. Trim the stem of the cabbage and place it in the center of the baking paper with the stem side down.
  3. Using a knife, cut the cabbage from the top in a similar fashion to slicing a pizza into triangles. Make cuts halfway through, about 4-5 cm deep.
  4. In a small bowl, mix together the olive oil, maple syrup, thyme leaves, salt, pepper, dried parsley or oregano, and chili sauce.
  5. Brush the cabbage generously from all sides with the prepared sauce mixture. Ensure some sauce gets inside the cuts of the cabbage.
  6. Wrap the cabbage tightly with the baking paper and aluminum foil to seal in the flavors.
  7. Place the wrapped cabbage on a baking sheet and bake in the preheated oven for 3 hours. Do not remove from the oven before the allotted time.
  8. After baking, carefully open the foil and parchment paper. If desired, drizzle the roasted cabbage with balsamic vinegar for added flavor.
  9. Serve the whole roasted cabbage as a delicious and flavorful side dish or as a main course. Enjoy the tender and flavorful cabbage with its caramelized edges.
  10. Note: Feel free to adjust the seasonings and sauces according to your taste preferences. Experiment with different herbs and spices to customize the flavor of your roasted cabbage.

2 Tbsp chili sauce
I added 1 Tbsp of Balsamic vinegar after I opened the foil. Try it first and then add if you think it is to your taste.

 

Method:

  1. Place an aluminum foil twice the size of the cabbage on the counter and place baking parchment paper on top.
  2. Place the cabbage in the center of the baking paper with the stem side down.
  3. Cut the cabbage on top like you cut a pizza into triangles. Cut half way about 4-5 cm
  4. Mix the rest of the ingredients in a small bowl and brush the cabbage generously from all directions. Pour some sauce inside the cabbage.
  5. Wrap the cabbage well with the baking paper and aluminum foil.
  6. Bake in a preheated oven at 350 degrees for 3 hours. Not a minute less.
