Veggie Lentil Soup (Instant Pot)

Contents

  • 1 medium onion chopped, about 1 1/2 cups
  • 2 carrots, sliced, about 1 1/4 cups
  • 2 celery stalks chopped, about 1 cup
  • 1 medium white potato, diced, about 1 1/2 cups
  • 3 cloves of garlic minced
  • 28 ounces can diced tomatoes
  • Rinse 1 1/2 cups dried brown lentils
  • 1 1/2 teaspoons Italian seasonings
  • 1 teaspoon dried thyme
  • 1 teaspoon lemon pepper
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon of salt
  • 1 1/2 teaspoons lemon juice
  • 1 tablespoon of balsamic vinegar
  • 5 cups vegetable broth divided
  • pepper and salt to taste
  • more broth into theafter cooking
