INSTRUCTIONS:
Meatballs:
Preheat the oven to 400.
Add all of the meatball ingredients to a large bowl and mix well until combined.
Shape into about 15 meatballs and place on a baking tray lined with aluminum foil.
Bake for 25 minutes or until cooked through.
Casserole:
Preheat the oven to 350 degrees.
Pour 1/4 cup enchilada sauce into the bottom of a small baking dish or cast-iron skillet.
Place the cooked meatballs on the plate and top with the remaining enchilada sauce. Sprinkle grated cheese on top.
Bake for 15 minutes or until cheese is melted and bubbly.
