roasted vegetable and chicken soup

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon paprika
  • 6 cups chicken broth
  • 2 cups roasted vegetables (such as bell peppers, zucchini, squash, carrots, and potatoes)
  • 1 cup cooked white beans (such as cannellini or Great Northern beans)
  • 1/2 cup diced tomatoes (canned or fresh)
  • Salt and pepper to taste
  • Chopped fresh parsley, for garnish
