Quick and Easy Kung Pao Meatballs

Ingredients:

For the Meatballs:

  • 1 pound ground chicken, turkey, or pork
  • 1/4 cup breadcrumbs (you can use almond flour for a keto version)
  • 1 egg
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon soy sauce
  • Salt and pepper to taste

For the Kung Pao Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons hoisin sauce (or use a keto-friendly alternative)
  • 1 tablespoon sesame oil
  • 1 tablespoon sweetener (such as honey, brown sugar, or a sugar substitute)
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/4 cup water
  • 1 tablespoon cornstarch (or a thickening agent of your choice)

For Cooking and Serving:

  • 2 tablespoons oil (such as vegetable or peanut oil)
  • 1 red bell pepper, diced
  • 1/2 cup peanuts, chopped
  • Chopped green onions and sesame seeds for garnish
