Instructions:
- In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté until the vegetables are softened, about 5-7 minutes.
- Add the minced garlic to the pot and sauté for another minute until fragrant.
- Pour in the vegetable broth or water, then add the rinsed and drained lentils to the pot.
- Stir in the diced tomatoes (with their juices), ground cumin, paprika, dried thyme, salt, and pepper.
- Bring the soup to a boil, then reduce the heat to low. Cover and let the soup simmer for about 25-30 minutes, or until the lentils are tender.
- Once the lentils are cooked through, taste the soup and adjust the seasoning if needed.
- Ladle the Lentil Soup into bowls and garnish with chopped fresh parsley.
- Serve the soup hot, with lemon wedges on the side for squeezing over each bowl before eating.
