LENTIL SOUP

Instructions:

  1. In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté until the vegetables are softened, about 5-7 minutes.
  2. Add the minced garlic to the pot and sauté for another minute until fragrant.
  3. Pour in the vegetable broth or water, then add the rinsed and drained lentils to the pot.
  4. Stir in the diced tomatoes (with their juices), ground cumin, paprika, dried thyme, salt, and pepper.
  5. Bring the soup to a boil, then reduce the heat to low. Cover and let the soup simmer for about 25-30 minutes, or until the lentils are tender.
  6. Once the lentils are cooked through, taste the soup and adjust the seasoning if needed.
  7. Ladle the Lentil Soup into bowls and garnish with chopped fresh parsley.
  8. Serve the soup hot, with lemon wedges on the side for squeezing over each bowl before eating.
