What You’ll Need

For the Crust:

• 1 cup all-purpose flour

• 1/2 cup butter, softened

• 1/2 cup finely chopped pecans (optional, but adds a great crunch)

For the Cream Cheese Layer:

• 8 oz cream cheese, softened to room temperature

• 1 cup powdered sugar

• 1 cup whipped topping (like Cool Whip)

For the Lemon Pudding Layer:

• 2 packages (3.4 oz each) instant lemon pudding mix

• 3 cups cold whole milk (use slightly less than the box calls for to keep it firm)

For the Topping:

• The remaining whipped topping from a 12 oz tub

• Fresh lemon slices and zest for garnish
