I made a delicious Reuben sandwich using chaffles, which are low carb waffles made with cheese and eggs. Chaffles are great for keto diets because they are high in protein and fat, and low in carbs. I added some caraway seeds to the chaffle batter to give them a nice flavor and texture. Here is how I made them:
For the chaffles:
1 cup of mozzarella cheese (you can use whatever kind of cheese you like)
3 eggs
1/4 cup of almond flour
1/2 teaspoon of baking powder
1 tablespoon of caraway seeds
For the filling:
8 ounces of cooked corned beef, sliced thin
8 slices of Swiss cheese
1 cup of sauerkraut, drained
1/4 cup of mustard
