Keto Old Fashioned Meatloaf

Ingredients:

  • 1 1/2 pounds ground beef (preferably 80/20 for more flavor)
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/4 cup unsweetened almond milk (or any other non-dairy milk)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for a little kick)
  • 1/4 cup sugar-free ketchup (or homemade keto-friendly ketchup)

For the Glaze:

  • 2 tablespoons sugar-free ketchup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon erythritol or any other keto-friendly sweetener
