Instructions

  1. Prepare Dry Ingredients: In a large bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, xanthan gum, and salt.
  2. Incorporate Butter: Cut the chilled butter into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
  3. Melt Cheese : In a microwave-safe bowl, melt the mozzarella cheese  and cream cheese  together until smooth.
  4. Combine Wet Ingredients: In a separate bowl, whisk together the eggs, apple cider vinegar, and cold water. Add the melted cheese mixture and mix until well combined.
  5. Form dough: Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms. Knead the dough gently until smooth.
  6. Chill Dough: Shape the dough into a rectangle, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  7. Roll and Fold: Roll out the chilled dough between two sheets of parchment paper into a thin rectangle. Fold the dough into thirds, like a letter, and refrigerate for another 30 minutes. Repeat this process three more times to create layers.
  8. Shape Croissants: Roll out the dough into a large rectangle and cut it into triangles. Roll each triangle from the wide end to the tip to form croissant shapes.
  9. Bake: Preheat the oven to 375°F (190°C). Place the croissants on a parchment-lined baking sheet and bake for 20-25 minutes, or until golden brown and flaky. Allow to cool before serving.

  • Refrigeration: Store baked croissants in an airtight container in the refrigerator for up to 5 days. Reheat in a warm oven before serving.
  • Freezing: Freeze unbaked croissants on a baking sheet, then transfer to a freezer-safe bag once frozen. Bake from frozen, adding a few extra minutes to the baking time.
