Keto Cinnamon Rolls

Ingredients: For the dough:

  • 2 ½ cups almond flour
  • ¼ cup coconut flour
  • 1 tsp xanthan gum (for binding)
  • 1 tbsp baking powder
  • ¼ tsp salt
  • ¼ cup erythritol or your preferred keto sweetener
  • 1 large egg
  • ¼ cup unsalted butter, melted
  • ¼ cup unsweetened almond milk
  • 1 tsp vanilla extract

For the cinnamon filling:

  • 2 tbsp melted butter
  • 3 tbsp granulated erythritol or keto sweetener
  • 2 tbsp ground cinnamon

For the cream cheese frosting (optional):

  • 4 oz cream cheese, softened
  • 2 tbsp powdered erythritol or keto sweetener
  • 1 tsp vanilla extract
