**Garlic Fries:**
**Ingredients:**
– 2 large russet potatoes
– 2 tbsp olive oil
– 1/4 cup nutritional yeast (can sub Parmesan cheese)
– 1 tsp garlic powder
– 1 tsp paprika
– 1/2 tsp salt
– 1/2 tsp onion powder
– 1/2 tsp dried parsley
– Sprinkle of pepper
**Instructions:**
1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Wash the potatoes and cut them into fries, ensuring they are evenly sized.
3. In a large bowl, toss the potato fries with olive oil until evenly coated.
4. In a separate bowl, mix together the nutritional yeast (or Parmesan cheese), garlic powder, paprika, salt, onion powder, dried parsley, and pepper.
5. Sprinkle the seasoning mixture over the oiled potato fries and toss until the fries are well coated with the seasoning.
6. Spread the seasoned fries out in a single layer on the prepared baking sheet.
7. Bake in the preheated oven for about 40 minutes, flipping the fries halfway through, until they are golden brown and crispy.
8. Once done, remove the fries from the oven and serve hot with the vegan chipotle aioli.
**Vegan Chipotle Aioli:**
**Ingredients:**
– 1/2 cup vegan mayonnaise
– 1 chipotle pepper (from a can of chipotle in adobo sauce)
– 1 tsp adobo sauce (from the can of chipotle)
– 2 tbsp unsweetened almond milk
– Juice of 1/2 lime
– 1/2 tsp chili powder
– 1/2 tsp garlic powder
– 1/2 tsp smoked paprika
– Sprinkle of salt and pepper
**Instructions:**
1. In a blender or food processor, combine the vegan mayonnaise, chipotle pepper, adobo sauce, unsweetened almond milk, lime juice, chili powder, garlic powder, smoked paprika, salt, and pepper.
2. Blend until smooth and well combined. If the aioli is too thick, you can add more almond milk to reach your desired consistency.
3. Taste and adjust the seasoning if necessary, adding more salt, pepper, or lime juice to suit your taste preferences.
4. Transfer the chipotle aioli to a serving bowl or container.
5. Serve alongside the garlic fries for dipping.

How to
