Instructions:

  1. In a large pot, cook the Italian sausage over medium heat until browned. Remove the sausage from the pot and set aside.
  2. Add the onion to the pot and sauté until softened. Add the garlic and cook for another minute.
  3. Add the chicken broth and water to the pot and bring to a simmer.
  4. Add the sliced potatoes to the pot and cook until tender, about 15 minutes.
  5. Add the cooked Italian sausage back to the pot.
  6. Stir in the heavy cream and kale.
  7. Simmer the soup for another 5-10 minutes until the kale is tender and the soup is heated through.
  8. Season the soup with salt, pepper, and red pepper flakes to taste.
  9. Serve the soup hot with crusty bread or crackers.
