tasty pozole

Ingredients:

  • 2 pounds pork shoulder or pork butt, cut into bite-sized pieces
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cans (15 ounces each) hominy, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cups chicken broth
  • 2 dried ancho chilies, stems and seeds removed
  • 2 dried guajillo chilies, stems and seeds removed
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cabbage, sliced radishes, chopped cilantro, lime wedges, diced onions, sliced jalapeños, tortilla chips
