Keto Chicken and Dumplings

Ingredients

For the “soup”:

  • 1 tbsp extra-virgin olive or avocado oil (or ghee)
  • 1 large sweet onion, chopped
  • 3 garlic cloves, minced
  • 3 lb boneless, skinless chicken thighs or breasts (or a combination)
  • 8 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp coarse salt
  • 1/2 tsp freshly ground black pepper

For the dumplings:

  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1 tsp xanthan gum
  • 1 tsp baking powder
  • 1/2 tsp coarse salt
  • 1/4 tsp freshly ground black pepper
  • 1 tbsp unsalted butter, melted
  • 1/2 cup unsweetened coconut milk
  • 1 large egg, room temperature

Garnish

  • 1 tbsp chopped parsley (optional)
