Preparation Method
Step 1: Roast the Tomatillo Sauce Base
Preheat your broiler to high setting. Spread tomatillos, onions, garlic, and green onions across a foil-lined sheet pan. Broil while tossing occasionally until vegetables soften and develop charred spots—approximately 8-10 minutes depending on broiler heat level.
Step 2: Blend the Sauce
Transfer roasted vegetables to blender. Add oregano, cilantro, Hatch chile powder, salt, and pepper. Include a splash of water if mixture seems thick. While blender runs, slowly drizzle in olive oil to create emulsion. Process until completely smooth. Set aside.
Step 3: Prepare the Tortilla Chips
Stack corn tortillas and slice into 3 equal strips, then cut crosswise into rectangles—approximately 60 pieces total. Heat neutral frying oil in skillet over medium-high heat. Test readiness with one piece—immediate bubbling indicates proper temperature. Fry tortillas in batches until golden and crispy, about 1-2 minutes per batch. Transfer to paper towels for draining.
Step 4: Combine and Simmer
Wipe skillet clean if needed and pour in prepared green chile sauce. Bring to gentle simmer over medium heat. Add tortilla pieces, stirring carefully to coat evenly. Cook just enough to soften chips—approximately 2-3 minutes—while maintaining some crunch.
Step 5: Add Egg and Cheese
Create 4 wells throughout the chile-coated chips. Crack one egg into each well and cook gently until whites set but yolks remain soft. Remove pan from heat.
Sprinkle crumbled cheese across entire dish and allow to melt slightly from residual heat. Add dollops of Mexican crema over each serving.
Step 6: Garnish and Serve
Top with cilantro leaves and shaved radish slices for color and textural contrast. Serve immediately while hot and saucy.
