Instructions:
- In a large pot or Dutch oven, melt the butter over medium heat.
- Add the diced onion, carrots, and celery to the pot. Cook until the vegetables are softened, about 5-7 minutes.

- Sprinkle the flour over the vegetables, stirring to coat evenly. Cook for 1-2 minutes to remove the raw flour taste.
- Slowly pour in the chicken broth, stirring constantly to prevent lumps from forming.
- Add the milk to the pot and bring the mixture to a simmer. Cook for 5-7 minutes, stirring occasionally, until the soup thickens.
- Stir in the cooked chicken, and season the soup with salt and pepper to taste.
- Allow the soup to simmer for another 5-10 minutes to heat through and allow the flavors to meld together.
- Taste the soup and adjust the seasoning if needed.
