Instructions:

  1. In a large pot or Dutch oven, melt the butter over medium heat.
  2. Add the diced onion, carrots, and celery to the pot. Cook until the vegetables are softened, about 5-7 minutes.
  3. Stir in the minced garlic and dried thyme, and cook for another minute until fragrant.
  4. Sprinkle the flour over the vegetables, stirring to coat evenly. Cook for 1-2 minutes to remove the raw flour taste.
  5. Slowly pour in the chicken broth, stirring constantly to prevent lumps from forming.
  6. Add the milk to the pot and bring the mixture to a simmer. Cook for 5-7 minutes, stirring occasionally, until the soup  thickens.
  7. Stir in the cooked chicken, and season the soup with salt and pepper to taste.
  8. Allow the soup to simmer for another 5-10 minutes to heat through and allow the flavors to meld together.
  9. Taste the soup and adjust the seasoning if needed.
