**Cheesy Taco Soup**

**Ingredients:**

– 1 lb ground beef
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 1 packet taco seasoning
– 1 can (15 oz) black beans, drained and rinsed
– 1 can (15 oz) corn, drained
– 1 can (14 oz) diced tomatoes
– 1 can (10 oz) diced tomatoes with green chilies (such as Rotel)
– 4 cups beef or chicken broth
– 1 cup salsa
– 1 cup shredded cheddar cheese
– 1 cup sour cream
– Salt and pepper to taste
– Optional toppings: chopped green onions, sliced jalapeños, crushed tortilla chips, cilantro

**Instructions:**

1. In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.

2. Add chopped onions to the pot and sauté until they become translucent. Add minced garlic and cook for an additional 1-2 minutes.

3. Stir in the taco seasoning, black beans, corn, diced tomatoes, diced tomatoes with green chilies, and broth. Bring the mixture to a simmer.

4. Add salsa to the pot and continue to simmer for about 10-15 minutes, allowing the flavors to meld together.

5. Season the soup with salt and pepper to taste.

6. Just before serving, stir in shredded cheddar cheese until melted and well combined.

7. Remove the pot from heat and stir in sour cream.

8. Serve the Cheesy Taco Soup hot, garnished with your choice of toppings such as chopped green onions, sliced jalapeños, crushed tortilla chips, or cilantro.
