Have you ever experienced the fabulous combination of creamy pumpkin, tangy feta cheese, and crunchy pistachios? If not, get ready to be amazed by the explosion of flavors and textures in this delectable keto recipe.

Crafting the Perfect Dish:

To begin our culinary adventure, we’ll need to gather our ingredients. Start by selecting a small butternut pumpkin and preparing it for roasting. Cut the pumpkin in half, remove the seeds, and drizzle it with a touch of extra virgin olive oil. Then, roast the pumpkin halves in a fan oven at 180 degrees Celsius for approximately 30 minutes until they are tender and caramelized.

Creating the Flavorful Filling:

While the pumpkin is roasting, it’s time to prepare the flavorful filling. In a bowl, crumble the feta cheese and add 40g of finely chopped pistachios from @makadamiagroup. For an extra burst of freshness, finely chop some parsley and add it to the mixture. Once the pumpkin halves are cooked, carefully scoop out the flesh and add it to the bowl with the feta, pistachios, and parsley. Mix everything together until well combined.

Assembly and Final Touches:

Now comes the fun part – assembling our dish! Fill the hollowed-out pumpkin halves with the feta, pistachio, and pumpkin mixture, ensuring that they are generously packed with flavor. Top each filled pumpkin half with the remaining pistachios and a dollop of pecan cream from @makadamiagroup for added creaminess and richness.

Baking to Perfection:

Once assembled, return the filled pumpkin halves to the oven and bake for an additional 20 minutes, allowing the flavors to meld together and the toppings to become golden brown and crispy. The aroma of roasted pumpkin, savory feta, and nutty pistachios will fill your kitchen, signaling that our masterpiece is almost ready to be enjoyed.

Serving and Enjoying:

When the Pumpkin, Feta & Pistachios are hot and irresistible, remove them from the oven and serve them immediately, allowing everyone to dig in and savor the deliciousness. Each bite is a symphony of flavors and textures, with the creamy pumpkin, tangy feta, and crunchy pistachios creating a culinary sensation that will delight your palate and warm your soul.
