Vegan Chickpea Nuggets

These vegan chickpea nuggets sound delicious and nutritious! Here’s a breakdown of the method:

Ingredients:

  • 400g (2 1/2 cups) boiled chickpeas
  • Smoked paprika
  • Garlic powder
  • Onion powder
  • 15ml (1 tbsp) extra virgin olive oil
  • 60g (1/2 cup) almond flour or coconut flour
  • 2 tbsp nutritional yeast
  • Salt and pepper to taste

Method:

  1. Preheat: Preheat your oven to 200°C (180°C fan) or set your air fryer to 200°C.
  2. Mash Chickpeas: Pour the boiled chickpeas into a bowl and mash them with a fork or potato masher until they form a coarse paste.
  3. Season: Add smoked paprika, garlic powder, onion powder, extra virgin olive oil, almond flour or coconut flour, nutritional yeast, salt, and pepper to the mashed chickpeas. Mix well until all ingredients are evenly incorporated.
  4. Form Nuggets: Take spoonfuls of the mixture and form them into nugget shapes using your hands. You should be able to make about 16 nuggets from the mixture.
  5. Bake or Air Fry: Place the formed nuggets on a baking sheet lined with parchment paper, or directly in the air fryer basket if using an air fryer. Bake in the preheated oven for 15 minutes, or air fry for 10 minutes, flipping the nuggets halfway through the cooking time.
  6. Serve: Once the nuggets are golden and crispy, remove them from the oven or air fryer. Serve hot as a delicious and healthy snack or meal option!
