Vegan Mushroom Stroganoff



Ingredients:

  • 8 oz. sliced mushrooms
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp. olive oil
  • 1 tbsp. all-purpose flour
  • 1 cup vegetable broth
  • 1 cup non-dairy milk (such as soy or almond milk)
  • 1 tbsp. soy sauce
  • 1 tsp. smoked paprika
  • Salt and pepper, to taste
  • 8 oz. pasta of your choice (such as fettuccine or spaghetti)
  • Fresh parsley, chopped (optional)
