450g shelled pecans, toasted and finely chopped
175g good quality dark chocolate, finely chopped
2 tsp ground cinnamon
600g granulated sugar
250g butter
2 x 270g packs chilled filo pastry
6 cloves
1 small cinnamon stick
1 tbsp lemon juice

20cm x 30cm x 5cm deep, straight-sided roasting tin or baking dish, digital probe or sugar thermometer
