Thai Shrimp Soup


  • 1 lb. raw shrimp, peeled and deveined
  • 4 cups chicken broth
  • 2 cups coconut milk
  • 2 tbsp. red curry paste
  • 1 tbsp. fish sauce
  • 1 tbsp. brown sugar
  • 1 tbsp. lime juice
  • 1 red bell pepper, sliced
  • 1 cup sliced mushrooms
  • 2 green onions, sliced
  • 1 handful of cilantro, chopped
  • 1 tbsp. vegetable oil


  1. In a large pot, heat the oil over medium heat.
  2. Add the red curry paste and stir for 1-2 minutes until fragrant.
  3. Add the chicken broth, coconut milk, fish sauce, brown sugar, and lime juice. Bring to a simmer.
  4. Add the bell pepper, mushrooms, and green onions. Simmer for 5-7 minutes, or until the vegetables are tender.
  5. Add the shrimp and cook until they turn pink and are fully cooked, about 3-5 minutes.
  6. Taste and adjust seasoning if necessary.
  7. Serve hot and garnish with cilantro.
