postrecipes January 13, 2023 Ingredients: 1 lb. raw shrimp, peeled and deveined 4 cups chicken broth 2 cups coconut milk 2 tbsp. red curry paste 1 tbsp. fish sauce 1 tbsp. brown sugar 1 tbsp. lime juice 1 red bell pepper, sliced 1 cup sliced mushrooms 2 green onions, sliced 1 handful of cilantro, chopped 1 tbsp. vegetable oil Instructions: In a large pot, heat the oil over medium heat. Add the red curry paste and stir for 1-2 minutes until fragrant. Add the chicken broth, coconut milk, fish sauce, brown sugar, and lime juice. Bring to a simmer. Add the bell pepper, mushrooms, and green onions. Simmer for 5-7 minutes, or until the vegetables are tender. Add the shrimp and cook until they turn pink and are fully cooked, about 3-5 minutes.
