Stuffed Cabbage Roll Soup


  • 1 large head green cabbage, chopped
  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cans diced tomatoes
  • 6 cups beef broth
  • 1 teaspoon paprika
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 tablespoons tomato paste
  • 2 tablespoons lemon juice
  • Fresh parsley, chopped (optional)


  1. In a large pot, brown ground beef with onion and garlic over medium heat until meat is cooked through. Drain any excess fat.
  2. Add chopped cabbage, tomatoes, broth, paprika, basil, oregano, salt, pepper, and tomato paste to the pot. Stir well to combine.
  3. Bring the mixture to a boil, then reduce heat and let the soup simmer for 30 minutes or until the cabbage is tender.
  4. Stir in uncooked rice and let the soup cook for an additional 20-25 minutes, or until the rice is fully cooked.
  5. Stir in lemon juice, then remove the soup from heat.
  6. Serve hot, garnished with chopped parsley (optional). Enjoy!
