Spicy Stovetop Chili

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 1 jalapeno pepper, minced
  • 3 cloves garlic, minced
  • 1 pound ground beef
  • 1 pound ground pork
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (6-ounce) can tomato paste
  • 1 (15-ounce) can kidney beans, rinsed and drained
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup beef broth
  • 1/2 cup beer (optional)



Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the onion, bell pepper, jalapeno, and garlic and cook until the vegetables are soft, about 5 minutes.
  2. Add the ground beef and pork and cook until the meat is browned, breaking it up into small pieces as it cooks.
  3. Stir in the chili powder, cumin, paprika, salt, and pepper and cook for 1 minute.
  4. Add the tomatoes, tomato paste, kidney beans, black beans, beef broth, and beer (if using). Bring the mixture to a boil, then reduce the heat to a simmer and cook for 30 minutes.
  5. Serve hot, with your choice of toppings. Enjoy!
