Smoky Potato Soup

1 lb of bacon, diced
1 large onion, diced
1 tbsp of butter
8 potatoes, diced
1 carrot, grated
3 cloves of garlic, sliced thin or minced
5 c of water (you can certainly add BTB or use chicken bone broth. I added some veg better than bouillon)
Salt and pepper to taste
1 tbsp worchestershire sauce
1 tsp oregano
1 tbsp parsley
1 tsp ground mustard
1 tsp turmeric
1/4 tsp cayenne
1 can fat free evaporated milk.




Over medium heat start the butter and start frying the bacon. When it’s about 1/2 done add in the onions and cook until soft, then remove from the pot. Add in potatoes, carrot, garlic, salt and water. Bring to a boil and cook about 20 minutes. Add in the bacon and onions, seasonings and evaporated milk and allow to simmer for at least another 10 minutes. Check your seasoning after putting it all together. Enjoy!!

Edit: a few things to consider when I made this soup, was that I was losing too much weight from chemo. I had a baby 6 months prior to my diagnosis and I wasn’t placed on steroids, so I didn’t puff up. I needed calories (bacon), yet something mild and I wanted to incorporate cancer fighting or immune boosting ingredients, yet make it simple enough that I would have the energy to make it. I had a 4yr, 2yr and 8 month old. My oldest is autistic. I was VERY busy, lol. Little time to focus on the concept of being sick. Small ones don’t understand, you have to stick to what is normal and routine, especially with autism. They were the reason I survived and still do to this day.
