One small yellow onion, chopped
3 cloves garlic minced
1 package of spicy Italian sausage (I used links and took the casings off)
3 tbs flour
Crushed red pepper flakes
Half a teaspoon of hot sauce
1 teaspoon mustard or mustard powder (helps enhance flavors, trust me don’t skip this part!!)
2 cartons of chicken broth
1 cup heavy cream
1 parmigiana rind (this is the casing on a block of parm cheese. Kroger sells them without the cheese on it for cooking. You could also use grated parm cheese as well!)
1 family sized package of cheese tortellini
3 cups fresh baby spinach
Sauté onion and garlic, add Italian sausage. Brown until done. Drain grease. Add flour and seasonings, cook for about 1-2 minutes, add broth and heavy cream.
Let all ingredients simmer for about 45 minutes, take parmigiana rind out, boil your cheese tortellini according to the packaging, add into the soup, add 3-4 cups baby spinach, let wilt for about 30 seconds-1minute. Voila !!!!
