When you are sick and make peasant/comfort
food -Pastina Soup.
5 cups of water
2 tablespoons extra virgin olive oil
1 teaspoon of vegetable or chicken cubes
2 celery stalks cut into pieces as desired
1 medium onion sliced in small pieces
Salt to taste
1 cup of pastina. I use acini di Pepe
1 large carrot sliced in small pieces
Put all the ingredients into a pot and bring it to the boil. Lower the heat and simmer for 20 minutes then add the pastina. Cook until until the pastina is ready to remove . Break an egg into the pot and swirl with fork and salt it for taste.
