Lebeniye Soup

Ingredients:

  • 2 tablespoons rice
  • 1 cup cooked chickpeas
  • 6 cups water
  • 1.5 cups yogurt
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 2 tablespoons lemon juice
  • 200 grams ground meat
  • 1 onion
  • 1/2 teaspoon pepper
  • 2 tablespoons butter
  • 1 tablespoon mint



Instructions:

  1. Wash the rice and cook it in 1 cup of water. Add the remaining 5 cups of water to the pot with the cooked rice.
  2. Add the chickpeas to the pot and bring the mixture to a boil.
  3. In a separate bowl, mix together the yogurt, flour, salt, and lemon juice to make the sauce.
  4. Ladle one scoop of soup broth into the bowl with the sauce and mix until smooth. Pour the mixture back into the pot with the rest of the soup and stir to combine.
  5. In another bowl, mix together the ground meat, onion, salt, and pepper. Form the mixture into small balls.
  6. Melt the butter in a pan over medium heat. Add the meatballs to the pan and cook until they are browned on all sides.
  7. Add the meatballs to the pot with the rice, chickpeas, and sauce. Stir to combine.
  8. Bring the soup to a boil, then reduce the heat and let it simmer for 10 minutes.
  9. Stir in the mint and serve hot. Enjoy!
