• 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 pound ground beef (or turkey)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5-ounce) can diced tomatoes
  • 4 cups beef broth
  • 1 cup uncooked small pasta (such as ditalini)
  • 1 cup water
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the onion and bell pepper and cook until the vegetables are soft, about 5 minutes.
  3. Add the garlic and cook for an additional 1 minute.
  4. Add the ground beef and cook until it is browned, breaking it up into small pieces as it cooks.
  5. Stir in the Italian seasoning, salt, and black pepper.
  6. Add the diced tomatoes, beef broth, pasta, and water.
  7. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, or until the pasta is tender.
  8. Stir in the mozzarella cheese and Parmesan cheese.
  9. Serve hot, garnished with fresh basil. Enjoy!
