Keto Lemon Mug Cake


  • 1 tablespoon unsalted butter, melted
  • 2 tablespoons almond flour
  • 1 tablespoon coconut flour
  • 1/4 teaspoon baking powder
  • 1 tablespoon granulated erythritol or other low-carb sweetener
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest
  • 1 large egg
  • 1 tablespoon lemon juice


  1. In a microwave-safe mug, melt the butter in the microwave for 20-30 seconds.
  2. Add the almond flour, coconut flour, baking powder, sweetener, vanilla extract, and lemon zest to the mug. Mix well.
  3. Add the egg and lemon juice to the mug and whisk until the batter is smooth.
  4. Microwave the mug on high for 60-90 seconds, or until the cake is cooked through and no longer wet in the center.
  5. Let the mug cake cool for a minute or two, then garnish with additional lemon zest or a dollop of whipped cream, if desired.
